On the Side: Parmesan Zucchini & Corn


Zucchini is one of my favorite veggies, and I’ve recently discovered several new recipes (and I plan to try & share them all eventually). Today I’m sharing a recipe for Parmesan Zucchini & Corn.

This recipe only takes 10 minutes (max) to throw together, and it tastes incredible. I served it up with chicken & rice (and threw on a little soy sauce). I think it would also go great mixed in with fried rice (another recipe I hope to share with you guys soon).

Summer Scarves: The Vest


This week we’ve got one of my favorite scarf styles: the vest. It’s a really fun way to transform your scarf. Pair it over a strapless top or tank in the summer, or layer it over a long sleeve top in the winter.

Turning a scarf into a vest is really simple. To start, you’ll need a rectangular scarf (different lengths will work, but somewhere around 80” will be your best bet). Fold the scarf in half (hamburger style :) ), and tie the corners your are holding together. Make the smallest knot possible so you have more room for your arms. Now find the ends of the scarf, open it up, & slide it on.  It sounds a lot more complicated than it is, so just give it a try.

Depending on the width of your scarf, the length of the vest will vary. For a vest that hits around the hip, find a 25"–30” wide scarf. If you want a longer vest like mine, go with a scarf that’s 35"–40” wide.

The vest also works great as a swimsuit cover up, so try this style out and enjoy that last few beach/pool days of the summer. One more style to go in my summer scarves series!

On the Side: Sweet Potato Fries


Since I’m doing a scarf series for August (if you missed my last post, check it out HERE), I figured I’d do a little food series too, so my next few food posts are gonna be all about the sides (and healthy options at that!).

Sides are like the meal's accessories. We all know how important a good accessory is in an outfit, and sides are the same way with your meal. A delicious (& healthy) side can take your meal to the next level.

This week I bring you Sweet Potato Fries. The perfect combination of sweet & salty with a wonderful balance of crunchy & soft. Not only are sweet potatoes a healthy choice, but these fries are baked as well. I served them with a Chicken Ranch Wrap, but they would complement a variety of other meals, or even on there own as a snack. And don’t forget the dipping sauce! I love my sweet potato fries with ranch or ketchup. Enjoy!

Summer Scarves: The Kimono


It's August. We're deep into summer but dreaming off fall & pumpkin flavored everything. I know I'm not the only one. One of my favorite fall accessories is the scarf. But really...why put restrictions on fashion, people? Scarves are great 365/24/7, so I'm throwing together a little scarf series for the month of August. Scarf styles that are perfect for any season, but especially doable in the summer heat (and it doesn't hurt that a small piece of your fall wardrobe has found its way into your closet a little early). First up: The Kimono.

Let's face it, kimonos rock. You're essentially wearing your bathrobe in public and no one is judging you. I'm down. All you need is a square scarf and the ability to tie two knots, and you're on your way to a whole new world.
